Black Garlic is made up by fermented heads of unpeeled regular garlic. It retains  the benefits of vital elements of raw garlic
and removes the annoying garlic taste.
The garlic is kept in moist conditions and in a low temperature.
Then the naturally present sugar in garlic  change the taste, texture and flavour of this ingredient. The distinct black color comes from the production of a compound called melanoidin.
